Easy Cruciferous Crunch Stir Fry with Fava Beans

This quick and easy vegetarian stir fry is a nice alternative to a spinach or asparagus side dish for a main course. The fava beans are an excellent and inexpensive source of protein, have zero fat and no cholesterol – which makes it a perfect vegetarian main dish. Cancer fighting kale, collards and cabbage make your heart and immune system happy! Trader Joes has all of these ingredients pre-cut – so it will cut down on your prep time when you’re on the go!
INGREDIENTS:
1 8oz bag of Italian shelled fava beans (boiled, drained)
½ 10 oz bag of Trader Joes Cruciferous Crunch Collection (kale, brussel sprouts, broccoli, green cabbage and red cabbage)
½ 10 oz bag of Trader Joes Shredded Collard greens
2 scallions, chopped
1 medium clove of garlic, finely chopped
1 tablespoon of dill
1 tablespoon of black or white roasted sesame seeds
3 tablespoons of sesame or olive oil
2 tablespoons of ponzu or soy sauce
dash of cayenne
salt, pepper to taste
DIRECTIONS:
Chop the green onion and garlic finely and set aside. Boil the fava beans until tender and set aside. Fill a wok or large frying pan with oil and heat on medium. Add the pre-shredded vegetables to the pan and stir briskly, keeping the vegetables moving. Add the dill, ponzu, onion, garlic and remaining ingredients and continue to stir for another 5 minutes, until vegetables are partially cooked (do not overcook).
Serve as a side dish or with rice as a main course.
